TED ALLEN'S BAGEL SECRET = MASHED POTATOES

My mom always made bagels. They were small, rustically rolled, whole wheat, and delicious. I can't say that I remember watching her make them, but had I done so, I probably wouldn't have wanted to try. Like tortellini, they take forever...Seeing a pattern? Yup, I like trying time consuming recipes.

But let me say that it's worth the work for these guys. They are light, fluffy, oniony, and worth the work.

And yes, the secret is a small amount of mashed potatoes.

Be patient, and do this on a weekend--there's lots of rising that has to happen for this recipe to work. But the end product...well, take a look.
